Homemade Mushroom Jerky

This homemade mushroom jerky is meaty in texture and has a delicious umami flavor profile. I make this recipe very often. It’s actually become a staple item in my pantry now. Warning: these are addictive (not actually) but they are that good – so making just one batch may not be enough. Try it out for yourself.

There were a few things that were hard to give up when I first started my plant-based journey and one thing on that list was beef jerky. Luckily this homemade mushroom jerky does the trick and more. This mushroom jerky recipe actually does lots of tricks. This can be a simple road trip snack, it can be a vegan protein to throw into your salads, you can use it to garnish some dishes if you trying get fancy here.

How to make Homemade Mushroom Jerky …

You will need the following ingredients:

16 oz sliced bella mushrooms

1 Tbsp olive or avocado oil

1/2 tsp garlic powder

1/2 tsp onion powder

2 Tbsp soy sauce or tamari (I typically use tamari as it is gluten-free. Yes, soy sauce contains wheat gluten most often. Who would’ve thought?!)

1 Tbsp unsweetened ketchup (I like using the brand primal kitchen)

1/2 tsp nutritional yeast

salt + pepper to taste

Method for making this homemade mushroom jerky

  1. Wash and dry sliced bella mushrooms
  2. Throw mushroom into a bowl and toss with oil, garlic powder, onion powder, salt + pepper and mix.
  3. Put soy sauce or tamari and unsweetened ketchup into bowl of mushrooms and mix until well combined. Sprinkle in nutritional list and do one last mix.
  4. Spread evenly onto a dehydrator tray and dehydrate for 4 hours at 160°F
  5. If you don’t have a dehydrator then place on a baking sheet at bake at 250°F for 1 hour.
  6. Take out and allow to cool at room temperature. Enjoy!

If you don’t already have a dehydrator, I highly highly highly recommend getting one. I use this dehydrator and it is an absolute game changer!

Health benefits of baby bella mushrooms

According to SF Gate on healthy health, “Baby bellas are low-fat, cholesterol-free and a rich source of essential vitamins and minerals that can enhance your health and help prevent disease. These nutrients include selenium, niacin, copper and pantothenic acid. In season between December and March, baby bellas have an intense, meat-like flavor when cooked.”

Notes

Make sure the mushrooms are dry after you have washed them.
