It is so healing to know exactly where your food is coming from. The kale + red chard in this salad came straight from the backyard. Personally, I can taste so much more life + flavor knowing where I’m sourcing a portion of my food. 🌱 ⠀

I encourage y’all to start growing some food in your yard or if you don’t have a yard, get herbs from your local grocery store + place them in your window sill.

Garden Greens Salad w. Avocado Dressing

Ingredients
  

For the Salad:

  • 4 cups kale, red chard + lettuce
  • 1 tsp olive oil
  • dash of salt
  • 1 celery stalk – finely chopped
  • 1 handful pistachos
  • 1/2 cup cherry tomatoes
  • dash of nutrtional yeast

For the Dressing:

  • 1/2 avocdao
  • 1/2 cup water
  • 1 tsp lemon juice
  • 2 cloves garlic
  • 1 Tbsp green onion
  • 1 Tbsp parsley
  • 1 tsp dill
  • 1 tsp salt
  • dash of black pepper

Instructions
 

  • Finely chop kale, red chard + lettuce. Massage with olive oil + salt.
  • Mix in chopped celery, cherry tomatoes + pistachios.
  • For the dressing: throw all ingredients into a blender until smooth consistency.
  • Add dressing into the salad + mix well.
  • Top with nutrtional yeast. Enjoy!
