Cilantro lime millet is a good staple for any south of the border dish! The fresh flavor of cilantro with a zesty burst of lime with the satisfying texture of millet makes for the perfect blend. I’ve replaced majority of my rice intake with millet. Millet is an ancient grain that was so many health benefits. It also supports weight loss which was my struggle with rice. In this recipe you will need the following …

Ingredients for Cilantro Lime Millet

  • millet
  • lime or lime juice
  • water
  • chopped cilantro
  • onion powder
  • garlic powder
  • salt
  • black pepper
  • olive oil
  • lime zest

This recipe calls for lime zest. I highly recommend a microplane for this. A microplane grater has become a staple tool in the kitchen. It finely grates anything from lemon, lime, oranges to cheeses. It is also affordable. You can easily get this in the shop.

This recipe is such a good base or side. I love throwing it into a bowl and pair it with beans, pico de gallo and any other toppings I have on hand.

I made a simple, but delicious lunch with this cilantro lime millet, black beans and fresh pico de gallo. I would also suggest topping it with the cashew cream cheese recipe.

Ingredients
  

  • 1 cup millet
  • 1 lime (or 2 Tbsp of lime juice)
  • 1 1/2 cup water
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp coriander powder
  • 2 Tbsp olive oil
  • 1/4 tsp black pepper
  • 1/2 cup chopped cilantro
  • lime zest
  • whole cilantro leaves for garnish

Instructions
 

  • Heat up water into large sauce pan. Add juice of the lime, salt, garlic powder, onion powder and coriander powder into the water. Bring to a boil.
  • Once boiling, stir in rinsed millet. Cover and simmer for 15. Keep covered and allow it to sit for 10 minutes.
  • Finely chop cilantro while millet is sitting. Then add olive oil, chopped cilantro, lime zest and black pepper. Stir.
  • Taste and add in more seasonings to your preference. Top with whole cilantro leaves.
