This is up for debate. I try to cook as zero waste as possible, so I say no! I usually never peel my veggies if not necessary. I give my carrots a good scrub with a dry brush and roast them exactly as they are. Although I do enjoy my veggies and food to be a bit rustic.

Orange: The classic color you probably think of when you think of carrots, orange carrots are higher in beta carotene, an antioxidant pigment (the carotenoid mentioned above). Eating too many can briefly turn your skin orange.
Yellow: These also contain beta carotene and lutein, a carotenoid researchers think may protect the eyes, since antioxidants help shield cells from damage.
Purple: These have more of the carotenoid anthocyanin. Researchers are studying its ability to treat inflammation and obesity.
White: These may be devoid of color, but they’re not devoid of nutrition. Their fiber will help ease your digestion.

How to make Easy Oven Roasted Rainbow Carrots?
Simple Ingredients Needed
You will need a bunch of rainbow carrots, extra virgin olive oil, all purpose seasoning, sea salt, and black pepper. Yes, it just takes five simple ingredients!
Method
First, preheat your oven to 425°F. Then make sure your carrots are thoroughly washed and leafy greens are trimmed.
Then spread the rainbow carrots onto a baking sheet. Drizzle with extra virgin olive oil, all purpose seasoning, sea salt and black pepper. Roll around to ensure that all parts of the carrots are fully coated.
Bake in oven for 25-30 minutes. Test to see if ready by piercing a carrot with a fork. If it is easy to poke through and tender then the carrots are ready. Allow to cool and enjoy!

- 1/2 tsp sea salt
- 1/4 tsp all purpose seasoning
